Spicy Coconut Corn on the Cob!

I recently had this amazing side at a restaurant in Boston! It was soooo good that I had to recreate it myself (and make it healthier, of course)! It’s a super cheap side for a meal, and you’ll probably have most of the ingredients already!



What you’ll need:

  • 4 corn without husk
  • coconut flakes
  • olive oil or avocado oil
  • light mayo
  • paprika
  • cayenne pepper
  • black pepper
  • salt
  • lime
  • sriracha (optional for extra spice)

Step 1:

Preheat oven to 450. Clean corn and brush with olive oil. Tightly wrap each cob in aluminum foil.

Step 2:

Place corn in the oven and set timer for 25 minutes. Heat a pan then add coconut flakes and a drizzle of avocado oil. Cook the coconut until golden brown. Turn corn occasionally.

Step 3:

Mix all spices in a bowl with mayo. (To be honest, I totally eye-balled this and tasted it until it was to my liking).

Step 4: 

Take the corn out of the oven, and unwrap them from the aluminum foil. Plate the corn and brush on mayo spread on each cob. Sprinkle the coconut flakes on top of each cob, drizzle a little lime juice, and voila!
